Ingredients

- 2 wild ducks
- to taste orange, quartered
- to taste celery, chopped
- 3/4 cup cooking sherry
- 3/4 cup orange juice
Recipe
- 1 soak ducks in salt water all night. drain and rinse ducks.
- 2 salt and pepper ducks inside and out. stuff them with oranges and celery.
- 3 place ducks in roasting pan on a rack with water in the bottom.
- 4 pour sherry and orange juice over ducks.
- 5 roast 5 hours at 325 degrees.
