Pot Roast Italienne

Total Time: 3 hrs 15 mins Preparation Time: 15 mins Cook Time: 3 hrs

Ingredients

  • Servings: 6
  • 5 -7 lbs rump roast
  • 2 tablespoons lard
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 teaspoon oregano
  • 2 tablespoons onions, chopped
  • 1/4 cup water
  • 6 carrots, cut julienne style
  • 1 (9 ounce) package frozen italian cut green beans
  • 1/4 cup flour

Recipe

  • 1 brown meat in lard.
  • 2 pour off drippings.
  • 3 combine salt, pepper and oregano.
  • 4 combine with meat.
  • 5 add onion and carrots.
  • 6 mix flour and water.
  • 7 add water mixture.
  • 8 cover tightly and cook slowly 2 1/2 hours.
  • 9 add green beans.
  • 10 cook 15 minutes or until meat is tender and vegetables are done.
  • 11 remove meat and vegetables to a heated serving platter.
