Pepperoni Super Spuds

Ingredients

- 4 medium baking potatoes
- 1 (16 ounce) jar spaghetti sauce with meat
- 1 (15 ounce) can corn, whole kernel, drained
- 1 (4 ounce) package pepperoni, sliced
- 1/2 cup mozzarella cheese or 1/2 cup cheddar cheese, shredded
Recipe
- 1 wash potatoes; pat dry with paper towels.
- 2 prick several times with a fork; arrange on a microwave-safe plate.
- 3 cook, uncovered, on high for 14 to 17 minutes, or until potatoes are almost tender, rearranging once during cooking.
- 4 let stand for 5 minutes.
- 5 meanwhile, for sauce in a 2 quart microwave-safe casserole stir together spaghetti sauce, corn and pepperoni.
- 6 cook, uncovered, on high for 3 to 5 minutes or until heated through, stirring occasionally.
- 7 to serve, cut a deep slit in the top of each potato.
- 8 top with sauce and cheese.
