Smoky Chuck Roast

Ingredients
- Servings: 4
- 1/4 cup water
- 1 tablespoon liquid smoke (optional)
- 1 tablespoon brown sugar
- 1 teaspoon celery salt
- 1 teaspoon onion salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon pepper
- 1 (2 -3 lb) boneless chuck roast
- 1/4 cup barbecue sauce
Recipe
- 1 in a large resealable plastic bag or shallow container, combine the first eight ingredients.
- 2 add roast.
- 3 seal bag or covered container; refrigerate for 8 hours, turning once.
- 4 drain and discard marinade.
- 5 place roast in a greased 2 1/2 quart baking pan.
- 6 cover and bake at 325* for 1 1/2 to 2 hours.
- 7 baste with barbecue sauce.
- 8 bake, uncovered, 10-20 minutes longer or until beef is fork-tender.
