Smokin Peach Chicken

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 6 boneless skinless chicken breasts
  • 1/2 cup peach jam (homemade is best)
  • 1/3 cup honey
  • 1 teaspoon liquid smoke
  • 1 teaspoon montreal chicken seasoning
  • 1/4 teaspoon allspice
  • 1/4 teaspoon red pepper
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon tomato paste
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 onion

Recipe

  • 1 bake chicken breasts in an open dish at 350 degrees for 20 minutes.
  • 2 drain chicken juice and reserve.
  • 3 mix.
  • 4 the glaze ingredients (except for the onion) together well. set aside.
  • 5 place 1 tablespoon of olive oil into a small pan, add onion and cook over med heat until carmelized. then add the glaze mixture. simmer for 1-2 minutes. remove from heat.
  • 6 paint each chicken breast with the glaze and return to the oven for ten minutes.
  • 7 paint with the remaining glaze for 10 more minutes. remmove from oven.
  • 8 sprinkle with chopped parsley and cilantro if you wish.
