Smokin Peach Chicken

Ingredients
- 6 boneless skinless chicken breasts
- 1/2 cup peach jam (homemade is best)
- 1/3 cup honey
- 1 teaspoon liquid smoke
- 1 teaspoon montreal chicken seasoning
- 1/4 teaspoon allspice
- 1/4 teaspoon red pepper
- 1 tablespoon rice wine vinegar
- 1 tablespoon tomato paste
- 1/2 teaspoon fresh ground black pepper
- 1/2 onion
Recipe
- 1 bake chicken breasts in an open dish at 350 degrees for 20 minutes.
- 2 drain chicken juice and reserve.
- 3 mix.
- 4 the glaze ingredients (except for the onion) together well. set aside.
- 5 place 1 tablespoon of olive oil into a small pan, add onion and cook over med heat until carmelized. then add the glaze mixture. simmer for 1-2 minutes. remove from heat.
- 6 paint each chicken breast with the glaze and return to the oven for ten minutes.
- 7 paint with the remaining glaze for 10 more minutes. remmove from oven.
- 8 sprinkle with chopped parsley and cilantro if you wish.
