Smokey Chipotle Bean Chile

Ingredients
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1/4 teaspoon nutmeg, grated
- 1 teaspoon brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 medium onions, diced
- 5 garlic cloves, diced
- 1 jalapeno, diced
- 1 1/2 lbs ground beef
- 4 chipotle peppers, with some of the adobo sauce, chopped (from a can)
- 1 (28 ounce) can whole tomatoes with juice, hand crushed
- 1 six oz.can tomato paste
- 1 (15 1/2 ounce) can great northern beans, drained and rinsed well
- 2 cups cheddar cheese, grated

Recipe
- 1 mix the first seven ingredients together to make the spice mix.
- 2 chop the onion, garlic and jalapeno.
- 3 brown the ground beef, onion, garlic, jalapeno and spice mix in a large, heavy bottomed sauce pot.
- 4 add the chipotle peppers, crushed tomatoes and their juice and tomato paste.
- 5 chipotle note: i find chipoles in adobo sauce smokey and spicy but not hot. not everyone agrees with me so adjust to your taste. on scale of 1 to ten, with ten being the hottest, this made as stated is a 6.
- 6 simmer for two hours, stirring occasionally.
- 7 taste for seasoning and adjust to your taste.
- 8 gently stir in the beans.
- 9 simmer for one more hour, stirring once or twice.
- 10 serve with grated cheese and crackers.
