Smokey Chipotle Bean Chile

Total Time: 3 hrs 50 mins Preparation Time: 30 mins Cook Time: 3 hrs 20 mins

Ingredients

  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1/4 teaspoon nutmeg, grated
  • 1 teaspoon brown sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 medium onions, diced
  • 5 garlic cloves, diced
  • 1 jalapeno, diced
  • 1 1/2 lbs ground beef
  • 4 chipotle peppers, with some of the adobo sauce, chopped (from a can)
  • 1 (28 ounce) can whole tomatoes with juice, hand crushed
  • 1 six oz.can tomato paste
  • 1 (15 1/2 ounce) can great northern beans, drained and rinsed well
  • 2 cups cheddar cheese, grated
  • cracker

Recipe

  • 1 mix the first seven ingredients together to make the spice mix.
  • 2 chop the onion, garlic and jalapeno.
  • 3 brown the ground beef, onion, garlic, jalapeno and spice mix in a large, heavy bottomed sauce pot.
  • 4 add the chipotle peppers, crushed tomatoes and their juice and tomato paste.
  • 5 chipotle note: i find chipoles in adobo sauce smokey and spicy but not hot. not everyone agrees with me so adjust to your taste. on scale of 1 to ten, with ten being the hottest, this made as stated is a 6.
  • 6 simmer for two hours, stirring occasionally.
  • 7 taste for seasoning and adjust to your taste.
  • 8 gently stir in the beans.
  • 9 simmer for one more hour, stirring once or twice.
  • 10 serve with grated cheese and crackers.
  • 11 enjoy!
