Salsicce Al Crema ( Sausage/cream Sauce)

Ingredients

- 1 lb bulk hot italian sausage
- 1 cup onion, finely minced
- 2 teaspoons garlic, finely minced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon basil
- 1 teaspoon sage
- 1 teaspoon oregano
- 1 teaspoon tarragon
- 1 pint heavy cream
- cooked pasta, your choice
Recipe
- 1 heat a very large skillet; melt butter and oil, saute onion and garlic until translucent.
- 2 add sausage meat and spices to the onion mixture and cook on moderate heat for 10-15 minutes, or until the sausage is completely cooked. drain fat.
- 3 add the cream and reduce by 1/3, this should take about 5 minutes on moderate heat. stir very frequently to ensure that it doesn̢۪t stick or burn.
- 4 taste, adjust seasoning with pepper and whatever you want to add, pour over hot pasta.
