Open-face, Meatless Breakfast Sandwich

Ingredients

  • Servings: 1
  • 1 teaspoon olive oil
  • 1 egg
  • 1 frozen reduced-fat whole-wheat waffle
  • 1 vegan burger

Recipe

  • 1 spray a skillet with non-stick spray and heat oil in the skillet. break the egg into the skillet and 'fry' it.
  • 2 while the egg is cooking, toast the waffle in a toaster or toaster oven, and heat the boca patty in the microwave--one minute per side, on high.
  • 3 to assemble: place the toasted waffle in a bowl, and top with the heated boca patty. slide the fried egg on top of the patty. salt to taste, or serve with maple syrup!
