Roasted Chicken, Bean, And Arugula Salad

Ingredients

  • Servings: 4
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 tomato, diced
  • 1/2 cup onion, diced
  • 1/4 cup parsley, chopped and fresh
  • 1/2 cup chicken breast, roasted and shredded
  • 1 cup baby arugula, washed and trimmed
  • 1/4 cup fat, free balsamic viniagrette dresssing
  • 1/4 cup green bell pepper, diced

Recipe

  • 1 toss together all ingredients and serve cold.
  • 2 you can substitute the arugula with another leafy green -- like a spinach or a leafy mesclun mix.
