Ingredients

- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 tomato, diced
- 1/2 cup onion, diced
- 1/4 cup parsley, chopped and fresh
- 1/2 cup chicken breast, roasted and shredded
- 1 cup baby arugula, washed and trimmed
- 1/4 cup fat, free balsamic viniagrette dresssing
- 1/4 cup green bell pepper, diced
Recipe
- 1 toss together all ingredients and serve cold.
- 2 you can substitute the arugula with another leafy green -- like a spinach or a leafy mesclun mix.
