Slow Cooker Beef Stew

Ingredients

  • Servings: 5
  • 1 lb beef stew meat
  • 2 medium potatoes, peeled and cubed
  • 1 (14 1/2 ounce) can beef broth
  • 1 (11 1/2 ounce) can v8 juice
  • 2 celery ribs, chopped
  • 2 medium carrots, chopped
  • 1 medium sweet onion, chopped
  • 3 bay leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon pepper
  • 2 tablespoons cornstarch
  • 1 tablespoon cold water
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas

Recipe

  • 1 in 3-quart slow cooker, combine the first 12 ingredients.
  • 2 cover and cook on low for 7-8 hours or until meat is tender.
  • 3 discard bay leaves.
  • 4 in small bowl, combine the cornstarch and water until smooth; stir into stew.
  • 5 add corn and peas.
  • 6 cover and cook on high for 30 minutes or until thickened.
