Potato Ground Beef Casserole

Ingredients
- Servings: 8
- 5 1/4 ounces of pillsbury hungry jack mashed potato flakes
- 1 1/2 cups sour cream
- 1/2 cup water
- 1 lb ground beef
- 2 (8 ounce) cans tomato sauce
- 12 ounces corn mixed with chopped peppers, undrained
- 1/2 cup water
- 1 teaspoon salt
- 1 tablespoon instant minced onion
- 1/4-1/2 teaspoon pepper
- 1/8 teaspoon oregano
- 1/2 cup diced process american cheese or 1/2 cup cheddar cheese
Recipe
- 1 preheat oven to 350°f.
- 2 in ungreased 13x9 inch baking dish, blend dry potato flakes with sour cream and 1/2 cup water (mixture will be crumbly).
- 3 pat firmly into bottom of baking dish.
- 4 in large skillet, brown ground beef, stir in 1/2 cup water and remaining ingredients except cheese.
- 5 spoon beef mixture over potato mixture.
- 6 top with cheese.
- 7 bake 25 to 30 minutes until cheese is melted and bubbly.
